The Highland Cow (Bos taurus) is one of the most iconic and instantly recognisable cattle breeds in the world — and quite possibly the most photogenic. Originally from the rugged Scottish Highlands and Western Isles, these magnificent animals have been roaming the misty hills for centuries, perfectly adapted to harsh, cold, and wet conditions that would send most other breeds running. Their famously long, shaggy coats — which can be red, ginger, black, dun, yellow, or white — are actually double-layered, with a soft downy undercoat beneath a long oily outer coat that acts like a natural raincoat. Those magnificent sweeping horns aren't just for show either; Highland Cattle use them to dig through snow to find grass underneath in winter. Despite their wild and woolly appearance, Highlands are known for their exceptionally gentle, calm temperament — they are often described as the "friendly giants" of the cattle world. Hardy, intelligent, and surprisingly long-lived (often reaching 20 years), the Highland Cow is a true survivor with a personality as big as its fringe.
